Cullen's Crawfish Dressing
1 1/2 cup chopped onion
1 1/2 cup chopped celery
1 1/2 cup chopped red & green peppers
10 tablespoon butter
1 teaspoon each of red, white and black pepper
salt to taste
1/3 cup parsley
5 cups crumbled dry cornbread
1 pound of crawfish tails, shelled
2 cups chicken stock
2 eggs beaten
saute vegetables in butter untill tender. Mix with seasonings,
parsley, cornbread and crawfish tails in large bowel
bake @ 350 degrees for 1 hour
