Tex Mex Shrimp

 

James's Shrimp Tortillas

 

1/2 cup all- purpose flour
1/2 cup chickpea flour
1 tsp salt
1/2 pd  shrimp, shelled finely chopped
1/4 cup chopped onions
2 tbs chopped fresh parsley
oil for frying

In a bowl whish the flours and salt and gradually whisk in 1 cup water until smooth.
Stir in shrimp, onion and parsley. In a pan pour oil until 1/4 in deep and over high heat
drop batter by tablespoonfuls, spreading with a spoon until thin like pancakes.
Fry about 1 min until brown turn and cook other side.
