Creole Steak
4 (about 1 lb) Beef Cube Steaks
1 large ripe tomato
1/4 medium red or sweet onion
1/3 cup mayonnaise
2 tablespoons Creole mustard
2 to 3 drops hot pepper sauce, to taste
2 tablespoons melted butter
3 tablespoons Blackened Redfish Magic
4 (4 oz.) slices Muenster cheese
4 Kaiser rolls, onion rolls or hamburger buns
Red leaf lettuce leaves OR
Green leaf lettuce leaves
Slice tomato and onion thinly. Blend mayonnaise, mustard and hot pepper sauce to
make Creole Mayonnaise, then set mixture aside. Heat a large, heavy skillet over
Medium-High heat 5 to 7 minutes, until skillet is very hot but not smoking.
Meanwhile, brush both sides of steaks with melted butter. Sprinkle each side of
steaks with about 3/4 teaspoon blackened seasoning blend. Press seasoning into
meat. Cook steaks in skillet 2 minutes. Turn steaks and top each steak with a
slice of cheese. Cook 2 more minutes. While steaks cook, split rolls and heat
briefly in microwave. Spread Creole Mayonnaise over insides of rolls. Place one
steak inside each roll and top with lettuce leaves, onion rings and sliced
tomato.
