James's Breaded Chicken Marinara Sandwiches

 

4 frozen fully cooked Chicken Fried Chicken Breasts
4 ciabatta sandwich buns
1 green bell pepper, seeds and stem removed
1/2 cup marinara sauce
4 slices provolone cheese
4 teaspoons grated parmesan cheese
1 2.25 ounce can sliced ripe olives, drained


1. Heat broiler. Heat chicken in microwave according to package directions.
2. Meanwhile, cut each bun in half horizontally. Place on a baking sheet, cut-sides down. Toast lightly under broiler about 2 minutes.
3. Remove seeds and stem from bell pepper, then cut into 1/4-inch thick rings.
4. Remove bread from oven and turn cut-sides up. Spread 2 tablespoons sauce and sprinkle 1 teaspoon parmesan over each bottom half. Arrange olives, bell pepper rings and provolone over top halves.
5. Return bread to broiler until cheese melts, about 2 minutes.
6. Remove from oven. Place chicken on bottom halves and close sandwiches with top halves. Heat extra sauce for dipping sandwiches, if desired.
