Hamburger & Swiss Steaks
Cullen's Oven Baked Swiss Steak

1/2-pounds beef round steak, cut 3/4-inch thick
1/4-cup
all-purpose flour
1-tsp
salt
2-tbsp
shortening or cooking oil
1
16-ounce can tomatoes, cut up
1/2-cup
finely chopped celery
1/2-cup
finely chopped carrots
1/2-tsp
Worcestershire sauce
Cut
round steak into 6 serving-size portions. In a bowl combine flour and salt. With
meat mallet, pound 1 tbsp of the flour mixture into meat on each side.
In
a skillet brown meat on both sides in the hot shortening or cooking oil.
Transfer meat pieces to a 12x7 1/2x2-inch baking dish. Blend the remaining 2
tbsp flour mixture into the pan drippings in a skillet. Stir in the undrained
tomatoes, chopped celery, chopped carrots, and the Worcestershire sauce. Cook
and stir till mixture is thickened and bubbly; pour over meat in baking dish.
Bake steak, covered, in a 350 ºF oven about 1 hour and 20 minutes, or till meat
is tender. Serves 6.
