Granny's
Garlic Shrimp Tacos
2 Tbsp oil
1 small onion finely chopped
4 Tbsp tomato sauce or puree
2 Garlic crushed cloves
1 Tsp lime juice
1/2 Tsp chili powder
8 oz Peeled shrimp
1/2 Tsp Black Pepper
1 Tbsp freshly chopped parsley
6 black olives, quartered
4 Taco shells
1/2 cucumber
1/2 iceberg lettuce, shredded
4 whole shrimp
parsley to garnish
Fry the onion and garlic gently for two minutes
in the oil. In a bowl mix together the tomato sauce or puree, chili powder,
pepper, lime juice with 2 Tbsp water. Pour the mixture into the pan and cook for
1 minute. Add the shrimp and cook for a two more minutes. Add olives and the
chopped parsley.
Divide the mixture between the taco
shells. Place on a plate with the lettuce arranged around the edge. Garnish with
the whole shrimp, sliced cucumber and parsley.
