Granny's
Tongue Taco
1 beef tongue
1 12 count package taco shells
1/2 head lettuce, shredded
2 medium tomatoes, chopped
Picante sauce Sauces Mexican
1 small onion, chopped
2 cups shredded cheddar cheese
Wash
tongue and place in a large pot of water to cover. Simmer until no longer pink,
about 50 minutes per pound of tongue. Remove from water and let rest until cool
enough to handle. Peel skin from tongue and trim gristle. Cut into 1/4 inch
slices.
Heat oven to 350 degrees.
Remove taco shells from package and place on baking sheet. Carefully
separate taco shells and overlap edges. Bake for 5 to 7 minutes.
Place slices of tongue in each taco shell and top with lettuce, tomato,
picante sauce onion and shredded cheddar cheese.
You can tell a lot about a fellow's character by his way of
