Turkey
Black Bean Tortilla
6 Soft Taco Size Flour Tortillas warmed
2 medium Tomatoes chopped
3 cups cooked Turkey shredded
1/2 cup canned Black Beans rinsed and drained
4 Tbsp. canned Green Chiles diced
1/3 cup Green Onions sliced
1 Tbsp. Cilantro chopped
1 pkg. Seasonings for fajitas
1/2 cup Water
Combine tomatoes, black beans, chiles, green onions and cilantro; set aside.
In large skillet, combine seasonings and water; bring to a boil. Add turkey and
reduce heat. Fold in tomato mixture and cook on low for 5 minutes, stirring
often. Place 1/3 cup of the cooked mixture on each tortilla. Fold in sides and
roll-up.
It is not easy to find happiness in ourselves, and it is not
possible to find it elsewhere.
