Tortilla Diner
1 cup flour
1/2 cup yellow cornmeal
1/4 teaspoon salt
1 egg
1 1/2 cups cold water
1 pound lean ground beef
Tomatoes, chopped
Onions, chopped
Green bell pepper, chopped
1 pound cheese, grated
Lettuce, thinly sliced
Combine flour, cornmeal, salt, egg and water in a large bowl, then beat. Spoon 3
cup of batter onto a moderately hot ungreased griddle, flattening with the
bottom side of a spoon to make thin (1/4-inch) pancake. Turn tortilla when edges
become dry, but not browned, and cook on other side. Set aside.
To complete meal, brown ground beef. Reheat tortillas on a hot griddle with oil
until lightly browned. Place a portion of tomato, onion, bell pepper, cheese and
lettuce on top of each tortilla; roll and enjoy!
The successful person is the individual who forms the habit of
doing what the failing person doesn’t like to do.
