James's Sausage Bell Pepper Tortilla

 

1 package Hot or Sweet Italian Sausage, cut into ˝ inch pieces. 
1 ˝ tsp Dried Italian seasoning 
Salt & Pepper 
4 Tbsp. Vegetable Oil 
4 cups Total, sliced red, yellow & green Bell peppers (4-5med peppers) 
1 Tbsp. Garlic, finely chopped. 
6-8 soft Flour Tortillas 
1 cup shredded Chedar or Jack Cheese 
1 cup Jarred Salsa 
   Combine sausage and seasonings.  Cook in Heavy skillet in 2 Tbsp. Oil over medium heat.  Heat 10-12 minutes or longer until no longer pink.  Remove from heat and cover. 
Sauté peppers and garlic in 2 Tbsp Oil until tender.  Season with Salt and Pepper. 
Divide Sausage, peppers, cheese and salsa onto tortillas.  Fold and Serve.
