Lynn's Bulk Sausage Tacos
1 pound Regular or Hot Roll Sausage
1 (8-ounce) jar taco sauce
1 package taco shells (10 to 12 count)
2 cups (8 ounces) shredded Cheddar cheese
1 large onion, chopped
2 tomatoes, chopped
¼ head iceberg lettuce, shredded
Fresh cilantro sprigs and bell pepper triangles (optional)
Preheat oven to 350F. Crumble sausage into medium skillet; cook over medium-high
heat until browned, stirring occasionally. Drain off any drippings. Stir in taco
sauce. Bring to a boil. Reduce heat to low; simmer 5 minutes. Meanwhile, bake
taco shells until warmed and crisp. To assemble tacos, place 2 tablespoons
sausage mixture in each taco shell and top evenly with cheese, onion, tomatoes
and lettuce. Garnish with cilantro and pepper triangles, if desired. Serve hot.
Refrigerate any leftover filling.
Makes 10 to 12 tacos
