Lynn's Bulk Sausage Tacos

1 pound Regular or Hot Roll Sausage
1 (8-ounce) jar taco sauce
1 package taco shells (10 to 12 count)
2 cups (8 ounces) shredded Cheddar cheese
1 large onion, chopped
2 tomatoes, chopped
¼ head iceberg lettuce, shredded
Fresh cilantro sprigs and bell pepper triangles (optional)

Preheat oven to 350F. Crumble sausage into medium skillet; cook over medium-high heat until browned, stirring occasionally. Drain off any drippings. Stir in taco sauce. Bring to a boil. Reduce heat to low; simmer 5 minutes. Meanwhile, bake taco shells until warmed and crisp. To assemble tacos, place 2 tablespoons sausage mixture in each taco shell and top evenly with cheese, onion, tomatoes and lettuce. Garnish with cilantro and pepper triangles, if desired. Serve hot. Refrigerate any leftover filling.
