Cullen's Fried Turkey Over Peppery Greens
2 cups all purpose flour
1 tbs each; pepper, garlic powder and onion
2 tbs each; rubbed sage, chili powder
salt & pepper
2 pds boneless skinless turkey Tenderloin from breast
spicy greens; watercress, young mustard greens, argula sweet greens; leaf
lettuce, Romaine lettuce, spinach
apricot halves and blackberries for garnish
2 cups buttermilk
1 cup oil
In a bowl, mix flour with peppers, onion and garlic powder, sage chili
powder and salt
cut turkey into thin 4x2x1/2 inch strips and soak in buttermilk. Heat oil over
medium heat
remove turkey from butter milk and dredge in flour. Then dip back in buttermilk
then in flour to double coat.
Fry on both sides not crowding. Combine greens in a bowl, place on
platters add turkey strips
garnish with berry and apricot. Drizzle with buttermilk dressing
Butter milk dressing
1 cup mayo
1/3 cup buttermilk
2 tbs rice wine vinegar
1 tbs mustard seed
1 tbs ground cardamom
1/4 cup each honey an Dijon mustard
Mix together all and chill
