Kat's Turkey Tenderloin Pineapple Salsa

 

4 x turkey, breast, tenderloins, about 1" thick 
1 1/2 tsp salt 
1/2 cup olive oil 
1/4 cup fresh lemon, juice 
1/2 cup chopped onion 
    Pineapple Salsa 
1 med pineapple, skin removed 
1 med red onion, chopped 
2 x jalapeno pepper, seeded, and, minced 
1 x garlic, clove, minced 
1/2 cup fresh cilantro, chopped 
1 tsp sugar 

 Method : 
Rinse turkey and pat dry. Season with salt and pepper.
Combine olive oil, lemon juice and onion and add turkey to coat. Marinate for 1 hour.
Grill turkey for 5 minutes per side.
Pineapple Salsa:
Slice pineapple into 3/4 " rounds. Brush with olive oil and grill on high heat until browned, about 10 minutes. Cool and dice.
Combine pineapple, red onion, jalapeno, garlic , cilantro, sugar and salt. Marinate for 2 hours.
