James's Austrian Thighs
1 tsp paprika
1/8 tsp pepper
1 1/2 lbs turkey thighs, skinned, boned, and cut in 1/4" strips
2 Tbs margarine, divided
1 1/2 cups onion, finely chopped
1 clove garlic, minced
1 bay leaf
1/3 cup turkey broth
1/4 cup tomato sauce
1/4 cup sour cream
1/2 tsp sugar
D I R E C T I O N S
Sprinkle paprika and pepper over turkey strips. Melt 1 Tbs margarine over
medium-high heat in a large saucepan and saute turkey until lightly browned.
Remove from pan and set aside. Saute onions and garlic in remaining Tbs of
margarine until onions are translucent. Add bay leaf, broth, tomato sauce, and
turkey. Bring to boil then reduce heat to low, cover, and simmer about 15
minutes until turkey is tender, stirring occasionally. Fold sour cream and sugar
into mixture and heat through. Serve with egg noodles.
