Granny's Turkey Sausage & Vegetable Medley

 

1 Tbs Cornstarch 
1 Tbs Brown sugar 
1 Tbs Light soy sauce 
1/2 tesp Ground ginger 
1 c Vegetable or chicken broth 
1 pk Turkey Smoked Sausage, -cut into 1/4" slices (16oz) 
1 Tbs Oil 
4 c Assorted cut-up fresh -vegetables 
3 1/3 c Hot cooked rice 

In small bowl, combine cornstarch, brown sugar, soy sauce and ginger. Gradually blend in broth until mixture is smooth; set aside. Coat large, non-stick skillet with vegetable spray. Brown sausage; remove. Add oil and vegetables to skillet. Cook, stirring 3-5 minutes or until vegetables are crisp-tender. Add sausage and broth mixture. Cook, stirring until sauce thickens. Serve over hot rice. Makes 5 servings.
