Cullen's Cranberry Stuffed Tenderloin

 

2 Tbs butter or margarine, divided
2 Tbs finely chopped onion
1 cup soft bread crumbs
1/2 cup "craisins" (dried cranberries)
2 Tbs cranberry juice cocktail (or just water)
2 turkey tenderloins
1/4 tsp thyme

D I R E C T I O N S

In medium skillet sauté onion in 1 Tbs butter until tender. Add bread crumbs, cranberries, and cranberries juice. Mix well and set aside. Slice each tenderloin lengthwise, forming a pocket. Stuff with cranberry mixture and secure pockets with toothpicks. Place in ungeased baking dish. Melt 1 Tbs butter in microwave-safe bowl, and add thyme. Brush over top of turkey. Cover dish with foil and bake in a pre-heated 375 degree oven 35 to 45 minutes or until turkey is no longer pink inside. To serve, cut each tenderloin into 1-inch slices
