James's Orange Glazed Cutlets

 

1 lb  turkey breast, sliced into cutlets
salt and pepper
cinnamon
2 tablespoons vegetable oil
1/3 cup orange marmalade
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon powdered ginger

D I R E C T I O N S

Lightly sprinkle one side of cutlets with salt, pepper and cinnamon. In large non-stick skillet over medium-high heat, saute turkey cutlets in oil 1-2 minutes per side or until turkey is no longer pink in center. Remove turkey to platter and keep warm. In small saucepan over medium heat, combine marmalade, cinnamon, nutmeg and ginger; cook 1-2 minutes or until mixture is heated throughout. To serve, spoon marmalade sauce over cutlets.
