James's Lemon Chicken Thighs

 

1 1/2 pd Boneless, skinless chicken thighs
Nonstick pan spray
grated rind and juice of one lemon
1tesp grated ginger
2 tbs brown sugar
2 tbs butter
1/4 cup sherry
salt & pepper
lemon slices for garnish

Sauté chicken in skillet sprayed with oil. When chicken is brown on both sides.
Sprinkle with grated rind of lemon, grated ginger and brown sugar.
Stir in lemon juice, add butter and stir until sugar is dissolved. Pour in sherry and
stir to dissolve brown bits in pan. Cover and cook over low heat until chicken is tender
about 20 min. Serve over rice or noodles
