   Lynn's Huevos Rancheros

1 1/2 cups chopped onion
jalapeno peppers minced
1 clove garlic minced
Salt & pepper
1/4 cup oil
4 tomatoes chopped
6 eggs
6 fried corn tortilla

Sauté onion and garlic in oil for 5 min, add tomatoes, jalapeno, salt and pepper cover and simmer for 10 min. uncover and simmer additional 10 min.
Fry eggs and place on fried tortilla , spoon sauce over eggs.
