Lynn's Breakfast Quesadillas

 

1 tsp. butter
2 burrito-sized (10") flour tortillas
2 Tbsp. diced green chilies (mild)
1/2 cup grated Monterey Jack cheese
4 poached or fried eggs
1/2 cup salsa  Sauces Mexican
1/4 cup guacamole Kat's Guacamole SaladM21
1/4 cup sour cream

Melt butter over low heat in a skillet large enough to hold 1 tortilla. Lay tortilla in skillet and sprinkle with 1 tablespoon chilies and 1/4 cup cheese. When tortilla is warm, fold in half and continue to heat until cheese is melted. Remove tortilla to warmed oven. Repeat process with other tortilla

Place 2 eggs on each tortilla and top with salsa, guacamole, and sour cream
