Kat's Picante Baked Eggs
1/2 cup picante sauce or salsa
1 cup Monterey Jack cheese -- shredded
1 cup cheddar cheese -- shredded
6 eggs
1 cup sour cream
Tomato slices chopped fresh cilantro
Pour the picante sauce or salsa into a lightly greased 10-inch pie plate or
quiche dish. Sprinkle with cheeses; set aside. In a food processor, process eggs
and sour cream until smooth. Pour over cheese. Bake at 375F degrees for 20 to 25
minutes or until a knife inserted near the center comes out clean. Let stand 5
minutes before cutting. Garnish with tomato and cilantro, if desired.
The minute you settle for less than you deserve, you get even
less than you settled for.
