Tex Mex Nachos
Shanna's Canned Tuna Nachos
1 x 6-ounce can Bumble Bee Solid White or Chunk White Tuna in Water
1 x bottled jalapeno pepper, seeded and ribbed (optional)
24 x round or triangular tortilla chips
1/2 cup (2 ounces) shredded Jack or cheddar cheese
Method :
Open can, discard lid. Hold a small wire mesh strainer or colander over an empty
sink; dump can of tuna into strainer, hold over sink until all of the liquid has
drained. (To be sure all of the liquid has drained, gently press on tuna in
strainer with the back of a spoon.) Place tuna in a bowl; flake into small
pieces with a fork. Carefully mince jalapeno pepper, if using; stir into tuna.
Arrange chips on a large, microwave-safe platter or shallow casserole. Sprinkle
flaked tuna evenly over chips, then sprinkle with cheese. Microwave on HIGH
(100%) 30 seconds, rotate dish. Microwave on HIGH (100%) 30 to 60 seconds
longer, until cheese is melted. Cool about 1 minute.
