Tex Mex Nachos

 

Shanna's Fish Nachos

 

 

425g packet frozen  Oven Bake Mild Sweet Chilli Fish Fillets
2-3 cups corn chips
1 cup Mexican tomato salsa
1 cup grated tasty cheese
1 avocado, mashed
½ cup sour cream
Chopped fresh parsley or coriander for garnish

Cook frozen  Oven Bake following packet directions. Cut cooked fish into quarters.
Arrange cooked fish pieces and corn chips into an oven proof dish. Drizzle with tomato salsa and sprinkle with cheese. Place under a preheated grill until cheese is melted and golden.
Serve fish nachos with avocado, sour cream and sprinkled with parsley or coriander.
