Tex Mex Nachos

 

Lynn's Sausage Nachos

 

4 cup good quality tortilla chips (or a medium sized bag)
1 tbl olive oil
4 x plum tomato, peeled, and, diced
6 lrg basil, leaves, chopped
2 clv garlic, finely, minced
1 tsp olive oil
    sausage, spicy, Italian
1 sm can Romano beans, drained, and, rinsed
1 1/2 x grated fontina cheese or smoked mozzarella cheese
2 x green onion, chopped

 Method :
Preheat oven to 375 F (190 C).
Arrange 2 cups (500 mL) (or half of bag) of tortillas in a large shallow baking dish
Combine the olive oil, tomatoes, basil and garlic.
Meanwhile, heat olive oil and saute the sausage meat until browned and cooked through, about 3-5 minutes. Add the beans and just heat through.
Sprinkle half the sausage mixture over tortillas, cover with half the tomato mixture and half the cheese.
Cover evenly with remaining nachos and tomato mixture.
Sprinkle remaining cheese evenly over top. Sprinkle with green onions.
Bake the nachos for about 5-7 minutes or until cheese is melted and bubbly.
Serve immediately.
