Tex Mex Nachos

 

Lynn's Pumpkin Pepperoni Coconut Nachos

 

2 oz sliced pepperoni cut into quarters
3/4 cup canned pure pumpkin
1/2 cup chopped green pepper
1/3 cup shredded lowfat cheddar cheese
6 tbl medium chunky salsa
1 tbl Hershey's cocoa
1 tbl finely chopped onion
1 tsp chili powder
    tortilla chips
1/3 cup sweetened coconut flakes

 Method :
Place pepperoni in a greased 11-x-7-x-1.5 inch baking pan. Bake at 425 degrees for 5 minutes; drain. In a large nonstick skillet, combine pepperoni and next 7 ingredients. Cook over low heat for 5 minutes or until hot, stirring constantly. Serve pumpkin mixture over tortilla chips. garnish with coconut.
