Lynn's Scalloped Corn Chorizo
1 pound Chorizo, cooked and drained
1 (16 oz.) package chuck wagon corn
1 (14 1/2 oz.) can cream-style corn
2 jalapeno pepper, seeded and chopped.
6 green onion, chopped
1/2 cup sour cream, regular, low fat, or fat free
4 eggs, beaten
Heat oven to 350 degrees F. Spray a 13x9-inch-baking dish with non-stick cooking
spray.
Combine cooked chorizo, frozen corn, cream corn, jalapeņo pepper, onions, sour
cream and eggs in a large bowl. Season to taste with salt and pepper. Pour into
prepared baking dish and bake uncovered for 1 hour and 10 minutes or until
golden and bubbly.
