TexMex Potatoes 

 

Kat's Papas Chorreadas (Smothered Potatoes)

1 lb. small or medium potatoes (cut in halves or quarters)

1 medium onion

1 bunch cilantro

2 medium tomatoes

2 to 3 seasoning packets of Sazon Goya, the Azafran variety

1 Tbsp. ketchup

 

Peel the potatoes and boil until tender (do not overcook). Finely chop onions, cilantro and tomatoes. Saute onions in a skillet until golden brown; add tomatoes, cilantro and Sazon Goya; cook until tomatoes are fully cooked. Add ketchup. Pour sauce over potatoes and mix well. Serve with Colombian Carne Desmechada. Serves 4-6.
