Lynn's Sliced Tomatoes With Blue Cheese & Pine Nuts


Ingredients (makes 4 to 6 servings)
3 large (about 1 1/2 lbs.) fresh  tomatoes, sliced
1 tsp. finely chopped garlic
2 Tbsp. olive oil
1/4 tsp. freshly chopped garlic
2 Tbsp. toasted pine nuts
2 oz. blue cheese
1/2 Tbsp. chopped parsley
 
Directions
Slice tomatoes and arrange, overlapping, on a platter. Mix garlic with oil and drizzle over California tomatoes. Sprinkle with pepper and pine nuts and top with crumbled cheese and parsley. Let sit at room temperature 15 minutes before serving.
