James's Spoon Tortillas

 

1 cup flour
1/2 cup yellow cornmeal
1/4 teaspoon salt
1 egg
1 1/2 cups cold water
   

Combine flour, cornmeal, salt, egg and water in a large bowl, then beat. Spoon 3 cup of batter onto a moderately hot ungreased griddle, flattening with the bottom side of a spoon to make thin (1/4-inch) pancake. Turn tortilla when edges become dry, but not browned, and cook on other side. Set aside

And when it rains on your parade, look up rather than down. Without the rain, there would be no rainbow.
