Tex Mex Tostados

 

Kat's Swordfish Tostado

3 Tortillas fried crisp (4 inches)

3 pieces of cooked swordfish (2 oz.)

Salsa:

½ cup black beans, cooked and drained

½ cup mango peeled and diced

½ cup red onion diced

½ of a japeno finely chopped

¼ cup cilantro chopped

¼ cup lime juice

2 tbsp. olive oil

salt and pepper to taste


COOKING INSTRUCTIONS:

1. Combine all salsa ingredients and set aside for 4-5 hours.
2. Alternate tortillas, swordfish and salsa on plate. Garnish with avocado, jicama, black bean salsa and cilantro.
