Shanna's Cubed Turkey & Wild Rice Casserole

 

1 package wild and white rice mix, uncooked (6 oz)
2 1/3 cups water
1 can mushrooms, drained, (4 oz)
1 can artichoke hearts, quartered, drained, (14 oz)
2 to 3 tbsp chopped roasted red pepper or pimiento
2 cups cooked turkey, cubed
1 cup shredded Swiss cheese
PREPARATION:

In 2-quart baking dish, combine rice with seasoning packet, water, mushrooms, artichokes, pimiento and turkey. Cover with foil or lid and bake in preheated 350 degree oven for 1 hour and 15 minutes, or until liquid is absorbed.
Top casserole with cheese and bake, uncovered, for about 5 to 10 minutes or until cheese is melted and nicely browned.
