Lynn's Penne Sauce A La Vodka
Ingredients:
3 tbsp. olive oil
1 tbsp. butter
3 cloves garlic, chopped
1 shallot, chopped
1 cup vodka
1 cup chicken broth
1 can crushed tomatoes
Salt, to taste
Pepper, to taste
1/2 cup heavy cream
10 leaves fresh basil, roughly torn
1 pound penne pasta, cooked
Procedure:
Heat skillet on medium heat. coat with olive oil.
Add 1 tablespoon of butter.
Add garlic and shallot. saute until golden.
Add vodka and stir. reduce heat to simmer.
Let simmer for five minutes.
Add chicken broth and crushed tomatoes.
Add salt and pepper to taste. stir and simmer for another five minutes.
Add heavy cream and stir until pink.
Stir fresh, torn basil into sauce.
Let cook for another five minutes.
Pour over penne and serve
