     Smothered Greens

 

2 tbs unsalted butter
2 tbs olive oil
2 med onions, chopped
12 cups assorted greens- like mustard greens, broccoli rape, collards, kale, turnip
stemmed, washed and chopped. 
chicken stock
4 tsp cider vinegar
salt & pepper
hot sauce
chopped jalapeno 

in a large pan melt the butter with the oil, sauté 5 min without coloring.
Stir in greens and cook over medium high heat until wilted and tender 8-10 min
if dry add a little chicken stock. Stir in the vinegar, salt & pepper, hot sauce, jalapeno.
