Quick Beans and Greens

 

1 tbs olive oil
1 large minced garlic
Pinch dried red pepper flakes
1 pd spinach trimmed and washed and coarsely chopped
2-4 tbs water
salt & pepper
1 tbs balsamic
1 glove garlic minced
2 cans 15 oz each cannelloni beans
lemon wedge
grated Parmesan cheese
1 chopped jalapeno

Heat oil, add garlic and pepper flakes, when garlic has softened add green and jalapeno
fry greens on med-high heat, stirring constantly. If mixture is to dry 2-4 tbs water.
Remove from heat add salt & pepper and vinegar, stir beans into greens and return 
to med-high heat stirring occasionally for 10 min. Ladle into soup bowl with lemon wedge
and pass the cheese
