               Okra and Tomatoes

 

1/2 c butter or margarine
1 lg onion, minced
1/2 bell pepper, diced
1 qt okra, fresh, sliced/rinsed
4 fresh tomato, coarsely chopped
salt,& black pepper, to taste

Melt butter in large skillet, add onion and saute over medium heat until soft. Add bell pepper, okra and tomatoes, season to taste. Reduce heat, cover and simmer 20 minutes, stirring occasionally. NOTE: If desired, add fresh corn kernels. Makes a terrific fresh-tasting vegetable medley
