Caramelized onions

 

2 large yellow onions
2 large red onions
2 tablespoons vegetable oil
3 tablespoons fresh thyme leaves or 1 tablespoon dried
1 tablespoon balsamic vinegar
1 teaspoon dijon mustard
1/2 teaspoon salt


1. Heat oven to 325 degrees.
2. Peel each onion and cut in half; leave root end intact. Place onions in a shallow baking dish.
3. Combine oil, one-half of the thyme, vinegar and mustard. Pour evenly over onions and cover dish with foil.
4. Bake 45 minutes. Remove foil and continue baking 30 more minutes, or until onions are browned and tender. Sprinkle remaining thyme over onions and serve.
