Whole Baked Garlic

 

6 heads new crop garlic (Firm and unsporting)
1/3 cup butter
1/3 cup olive oil
salt & pepper
2-3 sprigs thyme
1/2 cup goat cheese
1/4 cup whipping creme
Peasant bread

Cut around head of garlic to remove outer skin from top half exposing individual gloves
Arrange in baking dish. Dot with butter, pour oil over, sprinkle with salt & pepper
place thyme springs in and bake at 275 covered 30 min. uncover and bake
additional 1 hour basting every 15 min.
make mild cream cheese by mixing goat cheese and whipping crème. until easily spread able
When Garlic is done spoon oil over garlic dip bread in oil, squeeze the oil over garlic and
eat with cheese and bread.
