Vegetable Casseroles

 

Lynn's Escalloped Tomatoes

 

4 c. fresh or canned tomatoes 
2 tbsp. chopped onions 
1 tbsp. chopped green peppers 
3 tbsp. chopped celery 
1/2 c. soft bread crumbs 
4 tsp. sugar 
1/2 tsp. pepper 
3 tbsp. flour 
2 tbsp. butter 
Combine tomatoes, onions, green peppers and celery in a large mixing bowl. Mix together flour, sugar, salt and pepper; stir into tomato mixture. Put all into greased casserole and top with bread crumbs. Dot with butter and bake at 350 degrees for 45 minutes
