Granny's Onion Casserole

 

4 Bermuda onions, cut in 1/4 " slices
6 slices day old bread, remove crusts
1 cup finely crumbled blue cheese (Maytag)
1 cup undiluted evaporated milk or light cream
3 eggs, beaten
Salt
Hot pepper sauce
Butter
Paprika


Preheat oven to 375º. Parboil onion slices in boiling water for 10 minutes.

Cut bread into small pieces. Butter a 1 1/2 qt. baking dish. Put onion in dish & cover with bread squares. Sprinkle with cheese.

Mix milk & eggs & season with salt & hot pepper sauce. Pour over ingredients in baking dish. Dot with butter & sprinkle lightly with paprika.

Bake for 40 minutes

Serves 6
