Vegetable Casseroles
James's Spinach Casserole
4 packages frozen chopped spinach, thawed and drained
2 cans artichoke hearts, quartered
1 (8-ounce) can sliced mushrooms
2 cans condensed cream of mushroom soup
3/4 cup mayonnaise
1 cup sour cream
1 tablespoon lemon juice
Worcestershire sauce to taste (about 1/2 teaspoon)
Tabasco sauce to taste (about 1/4 teaspoon)
Onion powder and garlic powder to taste (about 1/4 teaspoon each)
Salt to taste
Preheat oven to 350 degrees. Drain spinach, artichoke hearts and mushrooms.
Mix with mushroom soup, mayonnaise, sour cream and lemon juice. Season to taste
with remaining ingredients. Bake uncovered for 25 to 30 minutes. Recipe may be
prepared a day ahead, may be doubled and freezes well.
