Whole Turkeys

Whole Turkey Breasts

Cullen's Prosciutto Cheese Grilled Breast

 

3 1/2 lb boneless turkey, breast 
1/4 lb sliced Prosciutto
1/4 lb emmenthaler cheese
    Marinade
1 cup dry white wine
1 x juice of one lemon
1 med onion, chopped
1 tbl Dijon mustard
6 tbl dried marjoram or 2 tbsp dried marjoram
1 tsp paprika
1 x salt and pepper, to taste

 Method :
Make a deep cut in the turkey breast. Insert slices of prosciutto , then cheese until all slices are used up. Close the opening with toothpicks or tie with twine.
Combine all ingredients for the marinade and add turkey breast. Marinate at room temperature for 30 minutes turning turkey often to coat.
Place turkey skin side down and sear for 3-4 minutes. Baste and turn again. Cook turkey in a covered grill for 20 minutes or until temperature reaches 170.
