Whole Turkey Breasts

 

Nancy's  Breast of Turkey Baked In Salt Crust

4 pds boneless turkey breast
2 tbs crushed pepper corns
6 cups kosher salt
1 1/4 cup cold water
12 sage leaves

Preheat oven to 400. Rub turkey breast with pepper. In a nonmetallic bowl mix kosher salt with water until mixture is like damp snow. Make a thin layer of salt in the bottom of a glass roasting pan. Put 6 sage leaves on salt and add turkey, place remaining sage leaves on top of turkey. Mound rest of salt around turkey covering all of turkey, so it is completely enclosed. Roast 1-1/2 hours. Remove and let rest 10 min  crack salt crust with spoon and wipe salt off turkey and slice.
