Whole Turkey Breasts
James's Orange Plum Breast
1 whl turkey breast (6 to 7 pounds,
thawed if frozen
2 tbl butter, melted
1 cup plum preserves
2/3 cup orange juice
1/2 tsp dry mustard
1/2 tsp grated orange peel
Method :
Preheat oven to 450 F. Place turkey, breast side up, on rack in shallow roasting
pan. Insert meat thermometer into center of meaty portion without touching bone.
Brush with melted butter. Place pan in oven; immediately reduce temperature to
325 F. Roast uncovered, basting frequently, 2 hours and 20 minutes or until meat
thermometer reaches 185 F.
Meanwhile, in small saucepan blend plum preserves, orange juice, dry mustard and
orange peel. Heat slowly just until blended. Remove from heat. Baste turkey
frequently with sauce during last 30 minutes of roasting time. Remove from oven;
let stand 10 minutes before slicing. Heat remaining sauce to serve with turkey.
Makes 12 servings.
