Whole Turkey Breasts

Cullen's Prosciutto Wrapped Breast Tangerine Cranberry Sauce

 

4 x small tangerine
1 cup sugar - (250ml)
2 cup fresh orange juice - (500ml)
1 1/2 cup fresh cranberries - (375ml)
2 x turkey breast
    Prosciutto to wrap

 Method :
Preheat oven to 350 F - (175 C)
For sauce, combine orange segments with sugar and put them on a baking sheet to sit in the fridge overnight.
Add the tangerine to a sauce pan along with sugar and orange juice. Cook until thick and syrupy.
Add the cranberries and cook until the cranberries are soft. Strain and return just the liquid to the heat to reduce further. Once reduce pour over orange-berry mix.
Using plastic wrap with over lapping slices of Prosciutto; roll turkey breast with Prosciutto, like a jelly roll using the plastic wrap as a guide. Place wrapped turkey breast in a large heated skillet to sear until crispy.
Place seared wrapped turkey breast in the oven to bake until cooked through.
Slice turkey breast and plate with chive-mashed potatoes and top with sauce.
Serve and enjoy!
