Whole Turkeys

Lynn's Garlic Lemon Turkey

 

1 whole turkey, thawed
3/4 cup olive oil
1/3 cup lemon juice
6 cloves garlic, peeled
1 Tbs fine shavings from lemon peel
1 tsp salt
1 tsp pepper

D I R E C T I O N S

Prepare marinade the night before roasting: In blender, combine all ingredients except turkey and blend until mixture is pureed. Using an injector, inject marinade into all parts of the thawed turkey. Gently massage to distribute marinade. Place in large oven-roasting bag, close with plastic tie, and hold in refrigerator overnight.

To roast: Leave turkey in roasting bag. Place in roasting pan, and cut five 1/2 inch slits in top of bag. Roast in oven pre-heated to 350 degree F. Roast about 10 minutes per pound of turkey weight, or until Tender-Timer gauge pops up, or until meat thermometer in the thickest part of the thigh registers 180 degrees F. After roasting, allow turkey to stand 15 minutes before carving.
