Lynn's Garlic Herb Mussels Tomato Wine Sauce

 

2 doz Live Fresh Mussels, de-bearded and scrubbed clean
8 clv garlic, chopped fine, then crushed
1 x Lemon, fresh squeezed for juice
1 lrg Can Whole Tomatoes, with juice
3/4 cup Dry White Wine
1/2 cup Fresh Parsley, finely chopped
1/4 cup Olive Oil
1/4 tsp Fresh Basil, chopped
1/4 tsp Fresh Oregano,
1 lrg Loaf Italian Bread, sliced

 Method :
Heat olive oil in a large saucepan over medium-high heat; cook garlic (about 30 seconds), then add Mussels and cook (2 minutes); add lemon juice, tomatoes, wine, parsley, basil and oregano and simmer until Mussels open
(1-2 minutes more). Pour Mussels, with sauce, over slices of toasted Italian bread in large soup serving bowls.
